The Map | Change Projection command is only available in Didger projects that either have been set up with a projection or have been calibrated with a projection. Make sure you imported your data or created your project with a projection.
If you just have an image in the project, select the image and go to Image | Image Registration and Warping (Didger 4 and 5) or Image | Calibrate Image (Didger 3) to view the coordinate system the image was calibrated with and change it if need be.
